Coconut Nectarine Pops

These delicious pops are bursting with summer flavor. Sweet stone fruit and creamy coconut. Just three ingredients, and some popsicle molds are all you need.

Serves: 8 Pops
  • 6-7 medium sized ripe nectarines, pitted and quartered
  • 1 14 ounce can light coconut milk
  • 2-4 tablespoons sweetener *See notes
  1. Place the quartered nectarines in a blender along with the coconut milk and sweetener.
  2. Blend until smooth adding additional sweetener to taste.
  3. Pour into popsicle molds stopping short of the top and leaving about a ¼ inch of head space.
  4. Freeze until set, 6-8 hours.
  5. Pops will keep in the freezer for about a month.
Use the sweetener of your choice. Chose from granulated stevia, monkfruit, maple syrup, or agave. Start with 2 tablespoons and add more as required to taste.
