Mini Coconut Cream Pies

Vegan Coconut Cream Pie

So these happened a couple months ago… It took a few iterations to get the custard to the right consistency and flavor, but boy oh boy did I nail it on this last iteration. There is something about cream pies that just screams summer. I remember as kid we would often buy the frozen McCain…

Gluten-Free, Vegan, Toasted Coconut Pancakes

Sunday mornings are for sleeping-in, pj’s, and fuzzy socks. For most of us they’re the one day a week we allow ourselves to truly be lazy and just relax. I know that’s the case for me. Truthfully, if it wasn’t for walking the dogs, I might never leave the house. Heck, if I had someone…

Sugar-Free Granola

OMG you guys this granola is the bomb. Seriously, it so awesome, and it’ healthy! Today’s post was originally supposed to be tofu scramble, but I’m so in love with this granola that I advanced it in my post queue. I love granola and use to buy it all the time, that is until I…

Gluten-Free Fudge Brownies

October 5, 2016 by David James Di Pardo 1 Comment

Every once and a while I get the urge to play with gluten-free recipes. I don’t actually have any major issues with gluten, but I’ve found that when I over indulge my body makes sure to let me know. Generally speaking most of the foods I eat throughout the day are naturally gluten-free, but when…

Anzac Cookies

July 8, 2016 by David James Di Pardo Leave a Comment

Anzac cookies hold fond memories for me. These are the first recipe I made after discovering Heidi Swanson’s blog 101 Cookbooks. Heidi’s blog and books (her books are awesome too) are filled with vegan and vegetarian recipes. Its ironic as I discovered her blog years before ever going vegan. It wasn’t until a year later…

Easy Peasy Carrot Cake

November 5, 2015 by David James Di Pardo 1 Comment

Although a cake with cream cheese frosting seems appropriate all year round, carrot cake, with its warm spices seems all the more appropriate as the cooler weather arrives. Most carrot cakes I’ve come across have thick layers of dense, and sometimes dry cake, with a thin almost nonexistent layer of frosting in between them. Not…

Coconut-Chocolate Chip Banana Bread

May 28, 2015 by David James Di Pardo 6 Comments

Personally I think its really hard to make a bad banana bread. Pretty much anything goes in terms of add-ins; chocolate, nuts, fruit, etc. So as I was preparing my bags for my second trip down to South Africa last Friday, I noticed the bunch of bananas sitting in the fruit bowl on the dinning…

Cowboy Cookies

May 19, 2015 by David James Di Pardo 2 Comments

Weather in Montreal has been quite divers over the past couple of weeks. We have beautiful days above 30°C and the very next day it’ll drop down to 10 or 13°C. We had a few of those colder days over the past week and personally I refuse to start turning back on the heaters.
