Every year, my kitchen turns out hundreds of Christmas Cookies during the month of December. And every year I say I’m going to blog about them, and every year I don’t. So this year, for the first time ever I’ve created a new blog series called The 12 Days of Vegan Christmas Cookies. No partridges or ladies milking, just yummy vegan cookies.
Starting Monday December 11, I’ll release one new cookie recipe leading us right up to the holidays.
Now I’m going to be honest, when it comes to Christmas baking I use plain wheat flour and white sugar. Gluten-Free and Sugar-Free baking is fine the other 11 months of the year, but during the holidays, I keep things simple. Why add more stress? We’re going to keep things simple, with easy to find ingredients. Seriously, the most exotic ingredient you’ll find in these recipes is probably ground flax seeds, which all grocery stores sell. For the rest, as long as you’ve got flour, sugar, and oil, you’ll be good to go.
Of course if you have someone with a gluten intolerance or sugar restrictions you can swap out the wheat flour for gluten-free flour at a 1:1 ration. Same goes with sugar and replacing by any other granulated sweetener.
Are you excited? I certainly am! By Christmas we’ll have a cornucopia of vegan treats that everyone is guaranteed to love, non-vegans included. Because it’s the holidays, and nothing sucks more than eat grapes at the holiday parties and get togethers while everyone else in munching on fruit cake and cookies.
